Mussels with Peppers and Parsley
We only put mussels on the menu when we are happy with what came in that morning. They are steamed open to order in a wide pan with white wine, garlic and olive oil, then finished with strips of red and green pepper and a good handful of chopped parsley. The cooking juices are half the point, so bread comes with them.
