Covilhetes
A pastry from Vila Real, in the north of Portugal. The pastry is laminated by hand into dozens of thin layers that open into a spiral pattern as they bake, and they are baked in traditional black clay moulds so the outside colours evenly and the edges stay crisp. The filling is Maronese veal, slow-cooked until tender. Served warm, two to an order.
